Jorge Vallejo

He studied Administration and Culinary Arts in the Culinary Center of Mexico (Ambrosía). In 2004 he embarked on the Princess cruises, where he worked on tours around the world. Upon his return, he joined the Pujol restaurant team, and later became corporate chef of Grupo Habita, where he directed the kitchens of Hotel Condesa DF, Hotel Habita and Hotel Distrito Capital. In 2010, he was the executive chef of Diana Restaurant at the St. Regis Hotel, a position he left for a stay in Noma (Copenhagen). In 2012 he inaugurated, together with his wife Alejandra Flores, the restaurant Quintonil.

With the chefs Mauro Colagreco (Mirazur restaurant, France) and Virgilio Martínez (Central restaurant, Peru), in 2014 Vallejo started the Origins initiative, to recover and preserve products, techniques and culinary customs that survive in small communities in Latin America. Since then, the chefs have made trips to towns on the continent to investigate and share experiences.

That same year he ranked tenth on the Latin America's 50 Best Restaurants list. In the next edition he ascended to site 6 and remained in it in 2016.

It opened with the 35th place in the list of The 50 Best World's Restaurants of the English magazine Restaurant in 2015, and in 2016 it rose to 12th place in this ranking , until now the highest position occupied by a Mexican restaurant. In 2017 Quintonil occupied site 22 in the list.

He has received numerous awards and recognitions: he was named one of the Rising Stars in the world ( FOUR Magazine, 2014 ); Chef of the Year (GQ Men of the Year 2015 awards) and won the Millesime Mexico Award for Best Restaurant (2015). The magazine Who included him in his group of characters that transform Mexico (2015). He was invited to the dinner organized by The Best Chef -organization that promotes new gastronomic talents at the international level- for the 100 best chefs in the world, in Lyon, France (2015). In 2016, he entered the list of the 300 Most Influential Leaders of Mexico.
